There was a time when I did precious little gardening on my boat during the winter months. I don't know whether it is global warming or because I am in central London but I find it is now possible to have something interesting growing on my boat throughout the year, even in the depths of winter; conditions on an inner-city mooring are certainly milder than out in the countryside. At this time of year I try to keep a herb garden going, and evergreen herbs such as rosemary, bay and thyme are very tolerant and excellent to use in winter recipes. Winter savory is another herb, often overlooked, definitely worth growing to add to vegetarian and egg dishes. I am also continually amazed at how tough coriander is; I tend to purchase this in my local supermarket and put it outside where it lasts for weeks without coming to any harm at all. If you have a little space undercover, the more tender herbs can be grown all year round from seed and cut as micro greens or small salad leaves to add to winter salads. Basil is brilliant for this; look out for the red leafed varieties which have a good, strong flavour as well as adding a bit of colour to dishes.
