As I conclude six years of involvement on the Mushroom Council board of directors, culminating in my role as chair for the past year, I'm reflecting on the campaigns and initiatives launched during that time and how they have made an impact in that relatively short period.Fresh mushrooms are one of the trendiest foods in the nation today. Just last year, more than 50 media outlets, grocery retailers and culinary influencers named mushrooms a 2021 food trend. In fact, CNN recently declared mushrooms "the new grocery aislecelebrities." And Food Wine magazine announced they are "mad about mushrooms" on the cover of their September issue.
