We are looking at dairy beverages in this issue, and in this case, it's as much about liquid milk as it is about anything else. Despite the growth of start-ups whose sole aim is to manufacture dairy proteins in the labra-tory, and the expansion of plant-based drinks, the standard is still liquid milk for the majority of the planet. People make so many things from this deceptively simple substance. The cow is nature's laboratory, and her output is impressive. Alternatives spend a lot of time and processing to try and make something that tastes like milk. Isn't that interesting? It is a compliment, in a way, to the flavour and mouthfeel of dairy milk.
