The Fi Europe Innovation Awards are a great barometer for new product development in the food sector. With the plant-based trend continuing its stratospheric upward climb, last year's Fi Europe Plant-Based Innovation Award was the category to watch - and the competition was fierce. Pioneers in the plant-based movement, DSM, had two products in the final: Maxavor? Fish YE and Delvo?Plant enzymes. In the end, its vegan fish flavor, Maxavor? Fish YE, was crowned the winner in the plant-based innovation category. So, what makes this ingredient stand out? Here, we explore the burgeoning plant-based seafood market, the challenges of innovating new products that win over consumers, and how DSM's Maxavor18 Fish YE ingredients are leading the way in creating plant-based fish alternative products that stand out on retail shelves and will help drive repeat sales. DSM launched its award-winning Maxavor? Fish YE solutions to the market in March 2021 to answer the growing appetite for vegan fish flavors. Today, most commercially available seafood flavors currently on the market use fish or crustaceans, making them unsuitable for use in the growing plant-based category. Top notes are also often used to enhance the fish flavor of plant-based alternatives, but while many are vegan. Kosher or Halal, they are rarely able to meet all these requirements. The Maxavor? Fish YE natural flavors are derived from algal oil, which helps build authentic fish flavors in plant-based fish alternative products - including vegetarian fish nuggets and vegan fish sauce - to overcome these challenges. The solution is natural, sustainable and meets vegan, Kosher and Halal requirements, making it suitable for a variety of label claims.
