North Dakota and Minnesota combined produce the most red-skinned potatoes in the US, with about 16% of total potato production in the two states used for fresh marketing, which includes both red-skinned and yellow-skinned cultivars. As with all markettypes, stringent specifications must be met when packing, including freedom from disease and internal and external defects, appropriate size, and attractive appearance. The potato breeding project at North Dakota State University (NDSU) uses conventional breeding techniques to develop new selections and cultivar releases possessing appropriate agronomic and quality attributes important to fresh market potato producers and packing operations.
