In 1835, settler John Pascoe Fawkner made the first recorded mention of Australian butter in his diary - "made the [his] first butter - only a few pounds". Since then, the industry has had its ups and downs, staging a recent comeback a few years ago,with artisanal cultured butter. In the late 19th and early 20th centuries, very few dairy factories in Australia tried their hand at cheese production. It was reported around the 1860s that "the time consuming and often disappointing attempts at cheese making were virtually non-existent" in Australia.
