Recently jellyfish is getting more attention as a sustainable food resource. In Japan of today we regard jellyfish as one of Chinese ingredients. We eat jellyfish in daily meal but not frequently. However, jellyfish occupied more important position before Meiji period. It was appreciated as an ingredient in various dishes and was an essential dish in ceremonial banquets.
