Mitochondrial protein from sweet potato root tissue was fractionated into soluble and membrane-bound protein fractions. Membrane-bound protein was further divided into structural, heme and bile salt-insoluble proteins. The increase in each protein component was investigated duringaging of sliced tissueProteins other than bile salt-insoluble protein were synthesized during an early stage of aging. A large amount of bile salt-insoluble protein was synthesized after a lag phase lasting about 8 hr after slicingSynthesis of soluble, structural and heme proteins was suppressed by bodi chloramphenicol and cycloheximide. However, synthesis of bile salt-insoluble protein was inhibited by cycloheximide but not by chloramphenicol
