The Editor's Choice article for the July issue is the newest addition to our Established Leaders Special Series. "Influence of the droplet trajectory on the resulting droplet deformation and droplet size distribution in high-pressure homogenizer orifices" is an open access article by authors from the Karlsruhe Institute of Technology (KIT), Karlsruhe, Germany, and the Federal Research Institute of Nutrition and Food, Karlsruhe, Germany. In the Issue Highlights, the authors note, "The scope of this investigation is to determine the influence of the droplet trajectory on the droplet size distribution of emulsions of different viscosity ratios during high-pressure homogenization".
