In this study, the effect of carboxymethyl cellulose (CMC) edible coating containing summer savory (Satureja hortensis) extract (SHE) on the quality changes of spangled emperor (Lethrinus nebulosus) fillets over a period of 9 days of refrigerated storage (4 ±2℃) was investigated. The compounds of S. hortensis extract were evaluated by GC/MS, and carvacrol (28.67%) was the main combination of the extract. According to the results of this study, microbial growth, lipid oxidation and protein degradation in the coated fillets were delayed compared to the control sample (uncoated). Also, texture hardness and sensory properties of the treated samples improved as compared to the control during refrigerated storage. Among treatments, CMC+1.5% SHE was the most effective treatment to maintain the quality of L. nebulosus fillets. Thus, carboxymethyl cellulose coating enriched with S. hortensis extract could be a promising method to maintain the quality of L. nebulosus fillets during refrigerated storage.
