In April 2020 researchers suggested that vitamin K2 deficiency might worsen outcomes for Covid-19 patients. More work is needed to prove that link, but the study brought the little-known and under-consumed nutrient - called by some a "mystery nutrient" - out of the shadows. While consumer understanding of K2 is limited, the amount of published research on vitamin K2 has rocketed in recent years. Is vitamin K2, found mostly in animal products and fermented foods, being overlooked in the rush to plant-based?
