摘要

Microbiological Environmental Monitoring (MEM) in critical food manufacturing areas, like Cleanroom, can reduce microbial contamination and food spoilage risk and demonstrate control of the food manufacturing process. Annex D of the Standard EN 17141:2020 - Guidance for food applications - covers fundamental aspects for MEM: D.i Introduction, D.2 Establishment of microbiological control, D.3 Microbiological cleanliness for monitoring, D.4 Demonstration of microbiological control, D.5 Example for foodmanufacture. This document reports a simple presentation of the most important considerations described in the Standard EN 17141:2020 to improve the quality of food in sterile conditions.
