THE EXPORT MARKET is huge, with 450,000 tonnes shipped overseas annually, according to Seafish figures. It's challenging enough to catch that amount, let alone consume it, but for UK fishermen the prospect of their increasingly sustainable wild quarrydeparting the country on wheels, despite the income realised, can often leave them wondering why the domestic market is relatively small, heavily reliant on the import of non-native species, and with so much under-utilised potential.One of those traditionally exported species is the hake (Merluccius merluccius) with French, Spanish and Portuguese menus benefitting from the approximately 10,000 tonnes of product landed in the UK annually. With burgeoning hake populations in both theNorth and Celtic Seas, this particular gadoid has never been more abundant and landings are increasing in ports like Newlyn, where selective targeting with static gear has been the norm for many years.
