Salmonella is a difficult to control bacterium and new strategies need to be designed. Intervet International sought to examine the issues surrounding salmonella from three perspectives; the poultry producer, the retailer -and ultimately, the consumer. Worldwide, salmonella is recognised both as an animal pathogen and a well-documented cause of human food poisoning. As a risk to human health, the pathogen has long been associated with foods of animal origin - and in particular, with poultry and egg products. In the USA alone, over 30,000 human cases of sal-monellosis are reported annually - 4 figure similarly reflected in other developed countries, while in less developed areas of the world, the true incidence of infection in humans is certainly anissue, though much harder to quantify.
