A breath of fresh air

The Food Innovation Center at Rutgers has given new life to the New Jersey ag industry. Rutgers' Food Innovation Research and Extension Center opened its doors in 2001 with the goal of re-energizing New Jersey's food and farming industries. Because these industries have been challenged by consolidation and suburban sprawl over the past three decades, there has been a 55 percent decline in employment in the preserved fruit and vegetable sector. In addition, farmland acreage in New Jersey has droppedduring this period by more than 20 percent.
