Aonla has an astringent taste and is not popular as a table fruit. However, it shows great potential for processing to make several quality products like jam, sauce, chutney, murabba, candy, osmo-air dried aonla slice, pills, pickle, shred and supari.Aonla is an important fruit which is natural source of vitamin C (500 to 900 mg/100 gm of fruit pulp) and work better than synthetic ascorbic acid in deficiency diseases. Aonla has an astringent taste and is, therefore, not popular as a table fruit. However, it shows great potential for processing to various quality products like jam, sauce, chutney, murabba, candy, osmo-air dried aonla slice, pills, pickle, shred and supari. The cost of fresh aonla during the glut period varies between Rs 15-20 per kg whereas processing/value addition increases its value by more than 200 percent.
