Vegetables form an essential item of food both for the rich and poor. However the intake of vegetables has been too low in the diet of many people due to one or the other reason, the major reason is that many of us have not been able to appreciate thevast potential of vegetables in our diet and therefore, continue to depend too much on cereals. Though we have made tremendous progress in increasing the production of food grains, our performance in vegetables has lagged behind. Punjab state is giftedwith perfect climate to grow several vegetables especially during winter season. These vegetables are available at considerably low prices to the masses due to insufficient infrastructure for vegetable processing. The diets predominated by seasonal vegetables can be a boon to good health these vegetables play important role in preventing several nutritional diseases because these are rich in vitamins, minerals, antioxidants, phytochemicals (pigments) and fibre, immune system of the body gets improved and the body can be protected from various degenerative diseases.
