Masuda Brick Co., Ltd. has developed a new series of high-temperature pizza ovens POG Napoli for use by professionals which are available in the Ganjone Series. These ovens are patterned after the steam locomotive. In Japan today, manufacturers are striving to develop high-performance pizza ovens similar to the genuine ovens made in Italy since the ovens are indispensable for producing pizzas comparable to those being made in Italy, the country of origin of pizzas. These pizzas come in two types, one that is crispy with a thin outer dough covering and the Napoli type with a thick outer dough covering. The ovens employed for roasting these pizzas have working temperatures of 280℃ and 480℃, or differ greatly. Italian pizza ovens mostly consist of those fired with firewood, so previously there had been no alternative but to rely on the senses and skills of the pizza roasters. With firewood firing ovens used near building in urban regions, it had been difficult to acquire permits from the authorities concerned for use due to fire prevention regulations, and since the structures are generally rather large, the installation of firewood fired ovens weighing over 2 tons had been limited to the 1st floors of buildings. Oven users generally sought for pizza ovens using LPG or LNG fuels capable of easier temperature control and enabling Napoli type and crispy type pizzas to be prepared in the same manner as the stone ovens used in Italy, which led to the development of a new type of pizza oven made of bricks and refractory materials of indeterminate shapes and which enabled these conditions to be met.
