During this past month's American Convention of Meat Processors & Suppliers Exposition, a 90-minute processing demonstration focused on innovative linked sausage products drew a standing-room-only crowd. One of the presenters, Louis Muench of Louie's Finer Meats Inc., based in Cumberland, Wis., demonstrated the techniques and shared his formula for mixing a 25-lb. batch of Brewer Bratwurst (a beer brat with cheddar), which includes 12 oz. of beer to achieve what is becoming a popular flavor profile.
