Motif FoodWorks, a Boston-based food technology startup and spi-noff of Ginkgo Bioworks, has been growing its ideas since its incep-tion in 2019, while also raising more than $119 million in funding. Motif focuses its research and development around providing texture, fla-vor and color in food without using animal-based protein. The company also has a goal of develop-ing plant-based proteins that meet or exceed the nutritional principles of traditional meat. For Mike Leonard, chief technology officer of Motif FoodWorks, much of his job is match-ing the expectations consumers already have for current products.
