Introductory Remarks

It seems that there is not a good printed definition for aeration in the dictionaries to describe accurately how this term applies to confections. The Standard says that the word means to "to supply or charge with a gas" or "to expose to the circulation of air for purification" and to "expose to oxygen as in the purification of blood." None of these definitions really sends your thoughts to candy or the topics that are presented in this Back to Basics series. In fact, they bring to mind the aeration of lawns or bottled water or the Red Cross bloodmobile.
