The Annual PMCA Production Conference will be held April 27 through 29, 2009, at the Hershey Lodge and Convention Center, Hershey, Pennsylvania. Adrian Timms, The Hershey Co., PMCA chair Sessions coordinated by Steve Genzoli, Ghirardelli Chocolate Co., Steven Marcanello, Asher's Chocolates, and Reginald Ohlson, retired, Mars, Inc. Steve Genzoli, Ghirardelli Chocolate Co., is moderator. The tenth installment of the Back to Basics training series, Cocoa Beans to Chocolate Liquor, will feature demonstrations of the process of chocolate manufacture from extracting cacao seeds from a pod, to turning them into chocolate liquor.
