Natural and Nature-identical Colors in Confections

摘要

Natural colors are increasingly of interest to confection manufacturers as alternatives to synthetic colors. Concerns over the health and safety of artificial colors are driving the trend along with a desire by consumers for healthier, more natural foods. This paper focuses on natural colors approved for use in the United States and the EU, new natural-color developments for confections, natural-color applications in confections and changing label regulations.
