One of the greatest challenges for small craft chocolate makers is finding the technology that meets their production level, especially when they are starting out. It is not uncommon for bean-to-bar chocolate makers to make their own machines, including the sorter, cracker, winnower, vibrating tables and roasting machines. This is mainly due to the cost of the smaller machines currently on the market and the large gap between small machines and industrial-sized machines.
