There are many new confections entering the market that that are utilizing pearlescent pigments to generate special effects. This presentation will demonstrate some of the techniques used to generate these effects on a variety of confections. The techniques used will be demonstrated on a small lab-scale; however, they can easily be incorporated into larger, full-scale commercial applications.
