With farmers' markets seeing explosive growth, it is inevitable that food-borne illnesses will occur because of food purchased at fanners markets. Whether it is beef, peppers, tomatoes, spinach, or high levels of mercury making fish in Kentucky waterways unsafe to consume, recent news stories have alerted us to the danger of contaminated food. As the planet becomes more crowded, we produce more waste and our world becomes more polluted. Food contamination is real, and will not be going away soon. Farmers can guard against foreign objects in processed foods, but they cannot guard against all of today's food contaminations. Therefore, people will consume food, and they will get sick.
