Antioxidants Take Center Stage

Many of the ingredient developments discussed in this preview of the 1998 IFT Food Expo have to do, in some way, with the concept of promoting health or "wellness." The hottest ingredient this year is probably the antioxidant. Examples at the show will include soy components, vitamins, smoke flavors, a supplement derived from pine bark, oil fractions of cereal grains, honey, cherries, blueberries, mustard, tea poly-phenols, tomato products, juices rich in beta-carotene, and many, many others.
