The Food and Drug Administration's Dec. 3 Federal Register notice that it has approved irradiation of red meat means that irradiation can be used as a process to improve food safety in virtually all food products susceptible to disease-causing microorganisms. The list includes fresh and frozen red meats such as beef, lamb, and pork, as well as poultry (approved in 1993), fruits, vegetables, grains, and dry spices.
