This year's IFT Food Expo is the last one of the 1990s. But of even more significance, the ingredient developments that we see on the show floor this year may give us some idea of the kinds of things that wait for us in the first decade of the next century and beyond. Of course, when we use (or overuse) the term "Millennium," what does that word really mean in relation to food ingredients? How do you define Ingredients of the New Millennium? What are they? Well, there are probably different schools out there that can answer this question better than I ever could. I remember not too long ago one food editor wisely opined that the only real food of the Millennium is the candy M&Ms because they have the Roman numeral 2000 stamped on their bodies. While that reasoning is difficult to argue with, there may be other ways that can help identify ingredients of the new Millennium.
