There's no question that non-commercial operators have a vested interest in breakfast. In schools, the motivation is giving kids a healthy meal to start the day (should one not be available at home or to compensate for kids' tendency to skip the meal), with the goal of a more prepared and alert student who just so happens to behave better. In workplace settings such as corporations and hospitals, breakfast helps to broaden a dining facility's appeal to the customer base, and because items such as bagels, muffins, and fruit demand less labor htan more complex dishes (and who says bacon and eggs is complex?), profits can often come easily to operators opening up the cafeteria earlier in the day. The late crowd: Further, colleges and universities have seen fit to expand their breakfast not to later hours of the morning, but actually earlier - for a crowd not necessarily getting up earlier but going to bed later.
