Las vegas—"Innovation: A Gamble Worth Taking" was the theme of the 2006 conference of the Society for Foodservice Management, held here in October, and for three days there was plenty of innovation for operators to hear about and discuss. The latest trends in food, technology, human resources and even the environment were presented to the more than 400 SFM members in attendance.
