Surveys have long been used by non-commercial foodser-vice directors to uncover a wealth of information, from menu preferences and service issues to otherwise undetectable problems. But today, foodservice operators also are using surveys in new ways: as a lobbying aid, an educational tool and even as a way to promote their operations.
