Kitchen equipment that improves and maintains food safety is becoming the rule rather than the exception throughout foodservice. And industry professionals wouldn't have it any other way. "Certainly food safety plays a large role these days, as does energy efficiency," says Julienne Stewart, R.D., food-service manager at the SAS Institute, Cary, N.C. "Most equipment now will come with more food safety measures. It's almost a given. You know you're going to find that in a good piece of equipment." William Eaton, principal of Cini-Little International Inc., Germantown, Md., served as a judge at the Kitchen Innovations Pavilion at May's National Restaurant Association show in Chicago. Among the equipment that impressed him: 1. A transport cart that retains heat with a system based on a patented "solid-to-solid" phase-change technology. The system disperses heat up to two hours after being charged and unplugged, providing flexibility for heated transport of bulk food and/or pre-plated meals, while eliminating the need for canned fuels.
