Paradigm of valuation of raw milk payment: issues of quality, hygiene and sanitation in Colombia

TheaimofthisstudywastoevaluateandexplorealternativesinthepaymentmodelmilkqualityinColombia.Forthis,10124samplesofrawmilkof2718everytwoweeksfromsupplierswhoprovide14distribuitorsorindustriesweretaken.Fat(F),protein(P),totalsolid(TS),totalbacterialcount(incolonyformingunits,CFU)andsomaticcellcount(SCC)wereanalyzed.Forstatisticalanalysisrelatedtopayment,dataof3successiveperiodsweregroupedtocalculatemeasuresofcentraltendencyanddispersionmobile:mean,median,geometricmean,harmonicmean,minimum,maximum,range,variance,variationcoefficientandweightedaverage(60%atthelastsampling,30%theprevioussamplingand10%tothevalueoftwoprevioussurveys).PositiveasymmetrypresentedintheCFUandSCCdistributionofdataconfirmedthatthereisadifficultyinestablishingvaluesforqualitypayment.Themeasuresmobilecentraltendencyfoundwerecloselyrelatedanditwasnotpossibletodeterminethebestwouldestablishcriteriaforthemostconsistentpayment,however,theweightedaverageallowedestablishpenaltyorbonustothelatestsamplingandhadlessdependenceonsamplingpreviousorsubsequentfortnights,allowingforamorecoherenttransactiondependingonthegoodorbadqualityofmilkinthenearthecorrespondingpayment.Aconstantevaluationofthemethodofpaymentissuggested,sincebeingwithchangessuccessivesamplingmustevaluateandadjusttheformulasforthemethodusedtopaylesstraumaticforthefarmerandfortheindustry.
