Physico-chemical and microbiological proprieties of milk from two sheep breeds (Comisana and Sicio-Sarde)

SamplesofrawmilkfromdairysheepoftwobreedsComisanaandSicilio-Sardewereanalyzedfortheirphysicochemicalandmicrobiologicalparameters.Theresultsshowedthatthetwobreedshaveproducedmilkwithsamedensity,acidityandpHandcomparablelevelsoftotalsolids,fatandtotalnitrogencontent.Inbothbreeds,themilkcontainedthermotolerantcoliforms,Coagulase-positivestaphylococciandvariousgenusofyeasts.Someyeastaresearchedinthecheeseindustryfortheirlipolyticandproteolyticactivitiesandtheircontributiontocheeseripening(Candidalipolytica,CandidafomtaandCandidaalbidus)andothers(genusCryptococcus)cancauseharmfulchangesinthequalityofrawmilkbyreleasingundesirablecompounds.Inaddition,thecolonycountshowedthatthemilkoftwobreedshasbeenheavilycontaminatedespeciallyinJune.Thiscouldreducethenutritionalquality,processingopportunities,tasteandvalueofdairyproducts.
