摘要

The existence of differences in the acceptance of mate drink samples sweetened with different sweeteners and sucrose, before and after the accomplishment of physical exercise was evaluated. Acceptance tests were applied with hedonic scale structured of nine points for evaluation of aroma, flavor and overall impression. The data were analysed by analysis of variance and Tukey average tests. There was significant decrease (p≤0,05) in the acceptance of the samples of mate drink sweetened with cyclamate/saccharin 2:1 after the accomplishment of physical exercise
