Like many dairy processors, ice cream manufacturers are pursuing consolidation. The business is confronted by lower margins due to escalating competition, the growing purchasing power of supermarkets and the increased cost of raw materials. It is expected that future GATT/WTO negotiations will have a profound impact on the market and pricing of skimmed milk powder, so ice cream producers are looking for cost savings in both process and recipe modifications. In order to meet customer demand for cheaper ice cream ingredients, Cerestar has developed a spray dried glucose syrup to replace up to 55% of the skimmed milk powder as milk solids non-fat (MSNF).
