If Parmesan has been produced perfectly for the past 800 years, then how do you drive forward product development? With marketing and packaging innovation of course. Parmigiano Reggiano, or Parmesan as it is more frequently called, is a Protected Designation of Origin (PDO) cheese. It has been made exclusively in the northern Italian provinces of Parma, Reggio Emilia, Modena and Bologna for at least eight centuries. The methods of producing it have remained virtually unchanged since the 13th century- a famous early written account of the cheese can be found in Giovanni Boccaccio's 1348 The Decameron. It describes the use of "a mountain" of grated Parmesan cheese on macaroni and ravioli, a still scene repeated today.
