Currently, one of the most interesting food categories is functional foods. Despite the growing interest in these foods and ingredients, there is not a universally accepted definition for the term "functional food" or "functional ingredient". These products have been described by Danisco (and others) as "foods and supplements providing health benefits beyond those associated with basic nutrition".
