A new cottage cheese preservative from Danisco offers manufacturers a natural alternative to its chemical predecessor, says the firm. MicroGARD can be used at higher filling temperatures to the chemical preservative potassium sorbate, which can be used in temperatures above 7°C according to Danisco. It says the higher processing temperature improves the texture and mouthfeel of traditional cottage cheese and will save time and energy. Fonterra Australia has introduced the Perfect Italiano's Perfect Grater, designed no provide consumers with the ability to grate fresh parmesan cheese when needed from the block. The company suggests, "Just add it to the table with your salt and pepper shakers." It is sold with a 100g block of parmesan and 100g parmesan refills are also sold separately. It is reusable and dishwasher proof, and available in Coles and Woolworths in Australia.
