It's interesting to me how fractionating the runoff from cheese processing has led to a multibillion Euro industry globally, with the former pig feed product becoming something of a worldwide phenomenon. Pick up almost any product nowadays that has been formed into a bar, or made into a drink, and whey will no doubt be featured in it in some format. The best thing is that while it may be a processed part of milk, it maintains the desirable aspects of milk for use in infant nutrition, elder care, sports nutrition and just all around health.
