Enzymes play key roles in both the preservation and degradation of milk and the effects of heat treatment on milk enzymes have been extensively researched. However, with the development of nonthermal processes it has become increasingly important to understand how these different processes interact with the enzymes present in milk and milk products, whether used individually or as combination treatments to achieve safe products with improved sensory properties.
