The tempering process is very significant for the final chocolate product. A perfectly tempered chocolate consists entirely of identical βv crystals (beta 5). When the chocolate solidifies, these βv crystals will form a stable network of crystals. A perfectly tempered chocolate is characterised by a glossy surface and a crisp break, and the chocolate is easily released by demoulding.
