CONCHING

In the past conches have been dependent on a high standard of human expertise for successful results. Traditional types have had the risk of inconsistent energy control and the possibility of heat damage to the mass. The case for automatic variable speed conching was recently presented by A. Bertini - Carle & Montanari, at the ZDS school. We present an edited version of his advice.
