According to the American Diabetes Association, 18.2 million people in the United States, or 6.3% of the population, have diabetes. Not to pick on anyone, but imagine the population of New York State (19 million), and you can better grasp the numbers. An estimated 5.2 million of diabetic people are walking around unaware that they have the disease. Think the entire -state of Arizona (5.1 million) and then some. But, enough toying with numbers. What do they mean for confectioners? The good news is that candy makers aren't ignoring this burgeoning diabetic population. This explains why entries into the sugar-free category continue to expand, particularly in the fastest growing area of sugar-free confections: sugarless chocolate.
