BASED ON the flourishingdomesticecon-omy and in the context of the demographic change in European countries with high employment rates of young professionals and executives, the economy is facing an enormous shortage of skills. As a result, the shortage of skilled employees is the second important issue next to domestic demand [1]. Considering this background the question arises for the brewing industry if and how it should deal with these facts. According to the European Brewery Convention (EBC) it is possible to distinguish between countries such as Germany, Belgium, Denmark, the Czech Republic and Austria, where there is a wide range of training facilities for brewery technicians, and other countries, such as Italy, Great Britain and France, where most brewery operators (working in the brewhouse) are neither master brewers nor have they undergone any technical training to this effect. The number of occupational changers outweighs the number of trained professionals.
