摘要

The pleasures of eating good food can only be surpassed by the intrigue of entering a restaurant that has achieved what could be called its simmering condition. In diligent hands, it is the state that suggests anything could happen if the metaphorical heat were turned up or down but is in fact always tempered. It is a room that is suffused with a constant atmosphere of suppressed excitement prior to, during the course of and after service. The experience is an immersion into tastes, textures, smells, noises, memories, places, climates, people, behaviours and ideas for as long as it takes to consume a plate or two, or three.
