On her client's cake, Kim Payne used a family broach to inspire the side designs. The client also requested the tassels, crosses, pleating, pansies, sweet peas, and gold, while the stripes on the pleats were inspired by a pair of shoes. Payne thought it turned out so well that when it came time to create the competition piece she changed things slightly, keeping her client's wedding cake an original. One of the new things she tried on this cake was her technique for the tassels. "I've made them before using an extruder and it's always a sticky mess," she explains. "The paste has to be soft enough to be pushed through the tiny holes to make the individual strings, but they end up sticking to each other."
