1. To make the background lace pieces that will cover the sides of the tiers, first determine the circumference of each tier and add an inch to allow for the rolled fondant covering. The easiest way to do this is to run a tailor's tape around the outside of each cake pan to be used to bake the cake. Calculate the amount of background lace needed for each tier by dividing the circumference of each tier by the length of the background lace mold. Keep this measurement, as you'll refer to it later in Step 8.
