Pastillage is an essential icing in your repertoire—ideal for rigid pieces and anything that needs to set super hard. But working time, especially for those new to pastillage, can be off-putting, as this traditional decoration dries quickly. Fear not, because Flexique can make your life easier. Here is a handy way to extend your working time with pastillage. No matter how you pronounce it, this recipe is for you. 1. Prepare Flexique according to the package's instructions. 2. Mix cream of tartar into the powdered sugar. 3. Add approximately Vi of the powdered sugar and cream of tartar to a mixing bowl. 4. Warm 3 oz of Flexique® in the microwave until very warm (approximately 320℉ to 340℉ (160℃ to170°)). Use 10- to 15-second intervals so as not to overflow. 5. Immediately add the warmed Flexique to the mixing bowl and begin mixing with a dough hook. 6. Add remaining powdered sugar at intervals and continue mixing until all of the sugar is incorporated (approximately 2 minutes).
